Blueberry Baked Oatmeal



*Disclaimer- I have been super lazy when it comes to pictures lately... I promise to get out my "real" camera and focus, change f-stops, and try to be a legit blogger one of these days... I hate to tell you today is not that day SORRY!*

You don't need great pictures to share great food and that's why I am here today. I have finally made a version of Baked oatmeal that I am willing to share... (it took a few times to get a recipe that was blog worthy)

Blueberry Baked Oatmeal


What you need:
Dry ingredients
3 cups oats
1 cup dried unsweetened coconut - feel free to used sweetened
1/2 cup sliced almonds or nut of choice
1tsp cinnamon
1/4tsp ginger
1/2tsp cloves
1/2 nutmeg
1 cup fresh blueberries

Wet Ingredients 
2 Cups almond milk or milk of choice
1 egg white
1 6oz vanilla greek yogurt- any flavor would work
4oz apple sauce
1tsp vanilla
* you can make this vegan super easily by switching out the egg white for a flax egg*


What you do:


 Pre Heat oven to 375
-Mix all ingredients in a large bowl until everything is equally incorporated.
-Pour into a greased casserole dish.
-Once the oatmeal is oven ready sprinkle the top with chia seeds. This will add a little crunch and some extra nutrients. You can't really ever go wrong with chia seeds




-Bake on 375 for 25-30 min or until the top is golden brown.
-Once cool portion out your baked oatmeal for easy breakfasts for the week.

*cooking side note- I do not add sugar to my baked oatmeal so if you are someone who likes sweet oatmeal then before baking mix in some honey, agave, stevia*


When the time comes to eat these wonderful bars of joy get creative...

 I heat mine up and spread on some of my homemade chia jam, sliced fruit and some protein icing.
*mix protein powder and almond milk to a constancy you want and drizzle on top*

Brian and I ate this 3 times this week. It is an easy way to have a home cooked breakfast at 4:30am without having to cook :o)

Back to School...

Back to school to prove to Daddy I'm not a fool....

Sorry I totally just had a Billy Madison moment... Not that that is over, well not really, I am secretly singing the whole song to myself right now, shhh don't tell :o)

It has been a crazy few days back to school with my new class that I have the misfortune pleasure of spending the next 178 days with... but who's counting?

I am short on time and energy and need to make this post quick so I can get ready for my 15hr work day tomorrow... YIPPIE LUCKY ME :o)...

For those that read my post know I am not one who is short on words... I considering doing a "wordless Wednesday" post but HA that could never happen. Instead I have decided to do a Less Word Wednesday Post :o)

So I bring you WIAW... My favorites from this week!



Breakfast: Baked Blueberry Oatmeal (new recipe coming soon). Topped with Chia Jam, Protein icing and fresh fruit.

Snacks: Chobani, fresh fruit and Love Grown Granola. Dried Pinapple with Natural PB... YUM



Lunch: Chicken Breast, Black Beans, onions, tomatoes, salsa and a sprinkle of cheese. 



 Dinner: Baked Tilapia, Homemade sweet potato chips and homemade Mango salsa. The best bite was piling the mango salsa on the sweet potato chips... heaven!

I am not sure I like this whole being back to work thing... I am thinking an early retirement may be in the cards haha One can wish right?

Back to Work and WIAW

I am back to work, attempting, with all that is mighty, to prepare for my little kiddos. If you are a teacher you know that is not possible but hey I am trying! lol

I spent all day in meeting yesterday and today I have to head to the convention center for all day workshops for someone to tell me something about teaching HA... So needless to say I am over the meeting thing and have had no time to myself so far this week.

I didn't want to miss out on WIAW so it is 5am and I am hurrying to finishe before I have to get ready for an early day! :o)

In case you missed it on Monday, one of my good friends Carissa, had us over this weekend for a Pizza party and we had so much fun... check it out!

Favorites from this week so far


Breakfast:  Quinoa with Protein powder, Almond Milk and topped with Banana and Kiwi
Lunch: Chicken salad with quinoa and tomatoes, topped with guacamole instead of dressing
   I get up at 4:30am every morning so I usually hungry by 7 or 8 :o) knowing I was going to be in meeting all day I thought I may need a energy boost too. Solution... Coffee Protein Shake. Left over coffee I keep in the fridge, almond milk, protein powder, flax, chia and an antioxidant splenda. SOO GOOD!
Post Workout: Protein shake with berries, chia,  flax and almond milk. (Note: I did not drink these in the same day)

Dinner: Chicken Butternut squash quesadilla. Much like an older recipe I posted but I added chicken. :o)

I guess I need to go get ready... I have been "designated" as the driver today by my coworkers LOL At least I know we will get there quickly that way :o)

Pizza, Pictionary, Party!!!

 The 3 P's of a Fantastical Saturday Evening with friends.

Our good friends Carissa and Kyle decided to have a pizza party at there house.
The rules: Each couple was in charge of creating their own pizza to share with the 3 other couples.The Participants:

I was surprisingly in the mood to cook/bake once awake on Saturday morning. Brian had Drill all weekend so I knew while he was on the Navy Base I would have a ton of time to get stuff done. So I decided to bake some fresh Sourdough bread, and make homemade Ricotta to bring along to the party. I wanted to share one of my favorite treats with my friends!

There is something about homemade pizza straight out of the oven that just brings out the Italian in me, so when I got the text from Carissa about this party I knew I had to go straight up Italian with my Pizza... I mean how could I not?

So check out the Pizza's from each couple:

 
 Kyle and Carissa made their Pizza with Turkey Peperoni, peppers, onions and cheese. It was super yummy and a great way to get the pizza party going. 

Brian and I brought along the ingredients for a very Italian Pizza. Ours included artichokes, prosciutto, homemade spicy pomodoro sauce and a mix of 3 cheeses (I brought back to Fl. with me from my latest trip back home) Bosco Tartufo, Montegrappa, Pastore Sini. I was very pleased with how the Pizza turned out :o)


Carlos and Carissa decided to switch continents and bring Thai flavors to Pizza... and it was a good decision by them. They had chicken with a peanut sauce, cilantro, carrots and some bean sprouts.


Davis and Jordan finished off the party with a BBQ chicken pizza. The Pizza was HUGE and filled with a crazy amount of veggies, and no better way to end a pizza party then eating a pizza that is stuffed so much with toppings it is almost like a workout picking it up to eat LOL 

All the pizza was DELISH and once we were done eating it was on to girls vs boys Pictionary. I have to admit we got our butts kicked but we had a blast anyways... it was however a little unfair that all the men are great artists and none of the girls can draw worth crap...

We had an amazing evening filled with great food and great friends. We laughed and maybe even fought over Pictionary, but it was all in good fun and perhaps a little Wine Driven haha

Liebster Blog Thursday

The clock reads 5:24am and I am sitting upstairs in the house watching last nights Real World... Yep I still watch the Real World and I have no shame admitting it :o)

Secretly I wish I was 22 again so I could sign up for the show just to go to the challenges... I have no interest in living with 6 other random crazies, but if it meant I could compete in off the wall challenges in amazingly gorgeous countries I would be all over it.. MTV can we make this happen?


*Whew* No that is off my chest I can get on with today's post! My new page is coming along I am just trying to figure out a few last minute things before converting completely. Last week Jessie nominated me for the Liebster Blog Award. I normally do not take part in stuff like this but It seems fun. Jess loves fitness and healthy living about as much as I do and I have enjoyed being introduced to her blog.
Here are the rules

Random Facts:
1- I prefer eating my yogurt with a baby spoon
2- Hide and seek in the dark was my favorite game as a kid and I secretly wish we could play every time all my siblings are together haha
3- I have way to many clothes and shoes that 2 closets are filled to the max, yet I just went shopping :o)
4- I have 3 sisters and 1 brother and loved growing up in a big family
5- I would love to have a food truck and go wherever I wanted making healthy food for people lol
6- As much as I love working out and lifting crazy heavy weights, I am a girlie girl and would wear a dress and heels everyday if I could!
7-When I was younger I used to ask my mom if I could change my name to Samantha HAHA
8- I made it to the Jr Olympics 2 yrs in a row for 4 x 1 and Triple jump.
10- There are days when I could sit in my house all day, all alone and be totally ok with it!
11- I want another tattoo I just can't make up my mind on what to get

  1. What did you want to be when you were younger? HAHA I wanted to be a Cardiothorcsic Surgeon... Then I realized how long you had to go to school and I decided against it haha
  2. Do you enjoy breakfast, lunch, or dinner more? I think I could eat breakfast food for every single meal of the day.
  3. Are you a clean freak, or constantly put it off? Constantly put it off. I am not dirty, just dont feel the need to hang my clothes up as soon as they come out of the wash lol which usually results in a pile of clean clothes about as tall as I am.
  4. Have you ever had any serious injuries? I was always injured while playing sports. The worst was my ankle which to this day is still not the same nor fully healed.
  5. Do you prefer the summer or winter? WINTER! My bday is in Dec, I am from Pittsburgh and can't stand 100+ degree temp. here in Florida
  6. If you could meet any celebrity, or someone from the past who would it be? Hines Ward.. One day it will happen, I am determined LOL
  7. Are you a sports fan? If so whose your favorite team HUGE football fan. NFL team is the Steelers (no competition) College USF (my Alma Mater)
  8. Have you ever visited any places outside of the United States? I have not been anywhere yet (depressing) but we are planning something in the next year or so when all our necessary travel is done and we have travel money again lol
  9. Where do you see yourself 5 years from now? Ready to have kids, possibly not working anymore or just working for Brian haha (dream)
  10. Which do you like more; Running or Strength Training? Strength Training by far
  11. What’s your favorite movie? (This is hard) Favorite Girlie Movie: The Notebook or the Vow Favorite Action: Boondock Saints
