This week's tater was Mushroom-Onion
Except in true Alexis form I had to change it up a bit! Hey... it may be food network, but a girls gotta do what a girls gotta do.
So here is my version of the Mushroom-Onion tater...
Of course we have to start with some fresh sliced onions and fresh mushrooms.
These are my go to spices... Im Italian what can I see I cook with what I know. It works for everything else.. why not throw it in with my veggies.... can't hurt right? Well I hope not at least HAHA
I let the onions and mushrooms sweat for a bit before I added the white wine, spices and balsamic glaze.
Cook until onions are transparent and mushrooms are nice and soft. about 20 min.
I mixed a little fat free sour cream and then topped my tater with lots of onions and mushrooms. It was may favorite to date. I know we are only on version 3 but it was SOOOOOO good. I think the spices, wine and glaze gave it just that little extra....
Well so far we are going strong with our Tater Tuesday. Brian got to pick the next one, which is a bit crazy for me but we will see how it turns out... you will have to check it out next week to see what is cooking in our kitchen for Tater Tuesday!
