Vegetable Soup

A perfect bowl of Veggie Soup! 

I recently talked about my Detox. After not eating for 5 days you can't just jump into eating your normal diet again. I Detox twice a year and my first meal is always this dish... its easy and so delish!!! Filled with fresh veggies means important vitamins and nutrients... so Tuesday night was this exact dish... Brian is a huge meat guy so he had a side of BBQ chicken but he was in love with this soup... so here you have it I share the veggie goodness with you!

Ingredients
 1/4 cup EVOO
1 Cup chopped leek ( I slice 1/4 pieces then halve those pieces)
2 cups diced carrot 
1cup diced onion
1cup celery
1cup fennel 
3-4 Tbsp garlic pressed (depending on taste you can easily change this) 
6 plum tomatoes ( I don't seed mine... again its a preference)
6 cups chicken or veggie broth (if you are ambitious you can make this fresh) 
 1cup chopped green beans (not canned) *I think I will actually add 2 cups next time*
1 cup diced zucchini
4Tbsp fresh chopped parsley
2-3 sprigs of fresh thyme
1/2 Cup roughly chopped or torn Basil 

I like to chop the carrots, onions, celery, fennel and leek ahead of time because they all go in the pot at same time.
1. Heat oil in a heavy bottom pot over med heat. Sweat carrots, celery, fennel, and leek for 15 min. Stirring frequently. After 10 min add the garlic.


 2. Add tomatoes and season with salt and pepper to taste.

Cook for 3-5 min. Add broth Thyme and 3Tbsp Parsley 
 

Bring to a boil... this will take about 15min due to the cooking temp being so low (but it is worth it I promise). Once it comes to a boil reduce heat and let simmer uncovered for 30 min

3. Toss in zucchini, green beans, and basil. Continue to simmer for about 10 min or until veggies are tender. Stir in remaining Parsley and serve
 This is how I measure 1 cup of zucchini HAHA

*Side note* This is also super delish if you serve it over barley, orzo or egg noodles. Although I would not cook it in with the soup due to the starches.
