Wonderful Tuesday Dinner!!!!

 Curry Grilled Salmon with Homemade Coconut (brown) rice and honey and cinnamon sweet potato chips

Brian and I both worked on tonights dinner. He is my personal griller and I am his personal chef LOL.

My dad started off early with a 4:45am wake up call. I wanted to get into the gym and get my workout over with in the morning. I had scheduled parent conferences after school and didnt think I would have the energy to go to the gym after lol.

I decided last night I wanted sweet potato chips and we had already bought the Salmon on our Sunday grocery shopping outing. The coconut rice was a last minute decision. (one of Brian's favorite meals I make is Jamaican Jerk Tofu with Coconut rice and mango salsa) I opened the pantry and saw some Brown Basmati rice I bought a few weeks ago and then began to search for coconut milk.... crossing my fingers I had a can stashed in the pantry somewhere. SCORE ONE FOR ME!!! It was there.

So our dinner was set. Brian would Grill the Fish while I cooked the chips and the rice. We decided to go with some curry, salt and pepper to compliment the coconut rice.

Ok On with the recipes LOL

Sweet potato chips

sweet potatoes (1 was enough for both of us)
cinnamon
honey
sea salt

I am not the kind of cook who measures so forgive me for the lack of preciseness.
I use my mandolin to make sure all pieces are the same thickness... that way they cook evenly
Place in a bowl and add about 1T of honey. Enough to cover the potatoes

Add about 1T of cinnamon and 1.5tsp of sea salt

Ready for the oven. 350 for 10 min, flip and cook for another 10 min or until desired crispness

Coconut Rice


1Tbsp Butter 
2cups long grain rice
1 can unsweetened coconut milk
1cup water
Cinnamon sticks (I usually throw in about 3 LOL)
1/2tsp salt

*I used Brown Basmati rice in place of its white relative*

Melt Butter in 2-3 qt pot over moderately high heat. Add rice. Stirring until rice becomes opaque (about 3 min) 
Stir in coconut milk, water, salt and cinnamon stick

Bring to a boil, cover and reduce heat. Simmer for about 20 min. 
I usually lift the lid after about 15 min to check progress and to stir a bit to fluff the rice and move the liquid, that is left in the bowl,  around.

Our meal was yummy!!! I think next time I may cook the rice for an extra min before I add the liquid.. It was hard to tell with the brown rice, I have never had that problem before... OH WELL you learn right. 

After dinner we made a quick trip to Target for me to pick up Food Should Taste Good chips/crackers
because I have 10 coupons for free bags LOL.

I love these things 
And I may or may not have picked up a post Halloween treat for myself LOL 
Ok I did but hey I couldnt pass this up.. I had to try it lol 

I love cooking... It always makes any bad day better. I guess I would say cooking is my thereapy (along with working out)

  1. Can you do the coconut rice in a rice cooker?

  2. I dont see why not. Just saute the rice before putting it into the cooker.
